The  Silly Girl had her first try of the dish when Uncle Thomas brought it to office during our lunchtime rehersals for dinner and dance. The dish was prepared by his wife for the team.

The fisherman’s pie was refreshing, delicious and not as heavy tasting as some of the meat based pies. Perhaps the Silly Girl should work on this dish either this weekend or next weekend!

Ingredients

  • 450g mixed fish such as cod, haddock, salmon
  • 170g cooked prawns
  • 130g cooked squid
  • 4 hard-boiled eggs, shelled and cut lengthways into quarters
  • 2 tbsp chopped fresh parsley
  • 110g frozen peas, defrosted
  • 425ml white sauce
  • 450g mashed potato
  • 30g butter
  • Salt and freshly ground black pepper

Preparation method

  1. Preheat the oven to 190C
  2. Put the fish in a roasting tin and cook in the oven for about 10-12 minutes until opaque and starting to flake. When cool enough to handle, take off the skin, remove any bones and flake the fish into large chunks.
  3. Mix with eggs, prawns, squid parsley, peas and white sauce, season well and place in a deep ovenproof dish.
  4. Spread the mashed potato on top and dot over the butter.
  5. Bake in the oven for 30-40 minutes until golden brown and piping hot.

* For this dish, the Silly Girl will be switching to only cod fish and salmon.  And to replace the tedious white sauce, she has decided to use the fish broth (derived during the cooking process of the fish), 3 tablespoons of  milk, bit of butter, pinch of salt and pepper to create the sauce.  Hopefully this works!

And while I am not extremely active in wanting to own up my age (and I am not even reaching 40 yet), I can’t help but agree once again that age does change the way you look at things and respond to challenges.

And yes, older women are generally more generous with praise and while I’m not sure if it’s because of knowing how it feels to be unappreciated – I truly believe that it is really because we learn to be more thankful with life and not take things for granted.
