 I chanced upon this recipe recently. In the past, I was only able to master the simple pineapple upside down cake. But now there is a new flavour to the original recipe. I am sure that you will enjoy it as much as I did :)   

Ingredients

For the Base:

70g butter

70g soft brown sugar

3 pears, peeled and cored

¼ cup red wine (choose cabernet sauvignon or merlot)

For the Cake:

125g Butter, softened

1 cup Caster Sugar

2 Eggs, at room temperature

1.5 cups Self-raising flour, sifted

1 Tsp Ground Cinnamon

1/3 cup Milk, at room temperature

Method:

1)      Preheat oven to 180 degrees Celsius and  grease a 20-23 cm non-stick cake tin

2)      Warm 70g of butter, soft brown sugar and red wine in a saucepan over low heat until the butter has melted and the sugar dissolved

3)      Arrange the sliced pears at the bottom of the cake tin

4)      Make the cake mixture by placing all the cake ingredients in a bowl and mix well with an electric beater until well combined. Alternatively, you could also beat the mixture vigorously with a whisk or a wooden spoon

5)      Pour the wine mixture over the pears in the cake tin, then spoon the cake mixture over it

6)      Bake for about 45 minutes. Inset a skewer into the middle of the cake and it comes out clean

7)      Serve the cake warm

There are not many places in Singapore where one can sit down with a nice bottle of wine, listening to jazz music and basically relax…But I found one such place this evening.img_07261

Housed in Singapore’s very own ‘Gotham City’ (or the business complex also known as Parkview Square), Divine may be familiar to many in Singapore, as it is known for its its angel and a 12 metres wine rack. When an order for wine is made, the waitress, dressed as an angel-complete with her silver wings and tutu, will ascend upwards the wine rack in search for your bottle of wine . Antics aside, Divine is a wine bar that serves a wide selection of wine – from Australian, New Zealand, France to Italy and American wines. For the evening, I ordered a Pinot Noir and a French red. More importantly, Divine has a pretty decent jazz band, which churned out classics like “I love you for sentimental reasons”, “LOVE”, “Beyond the Sea”

I enjoyed my evening immensely with a few friends - chatting, listening to the music and enjoying our wine. This is something that Singapore really needs and for me, the experience was ‘simply divine’.

The weather in Singapore is getting unbearably hot and humid. To all you readers out there, take good care of yourself and if you can, drink more ‘cooling’ drinks. I was reading women’s weekly (May issue) this afternoon and chanced upon this sugar and water chestnut drink recipe.  

In times like this, its always good to keep cool. Enjoy.

 

Ingredients

600g Sugar Cane – Washed and cut into 10-cm lengths

100g Congongrass root or bai mu gen

100g Sugared winter melon strips

20-25 Water Chestnuts – peeled

8 bowls of boiled water – preferably cooled down

 

Instructions:

1)      Combine all ingredients in a saucepan.

2)      Simmer over a low fire for up to 3 hours

3)      Serve warm

 Lynne and Kirvy’s wedding was held tonight at Grand Shanghai, Grand Copthrone Waterfront.  And for many of us,  this was an event which we have been waiting for. And it was also a reunion for us as friends whom we have not seen in years, flew in to especially to attend the wedding dinner. 

To Lynne and Kirvy, congratulations once again and may this be the start of  more beautiful things to come.

L and A dropped by for a short visit this weekend and being fellow foodies, Reggie and Marcus brought them around to try out Singapore’s hawker food.
The Silly Girl joined in the afternoon and she brought a surprise gift for Reggie – a Peppa Pig Beanie from London. And I am not too sure if it was a good idea, for the 2 excited mummies L & Reggie spent the rest of the afternoon photographing a love story between Peppa Pig and Totoro (L’s toy). Marcus, A and myself had tried really hard to curb our laughters. But to no avail.

The last I heard, the 2 girls are intending to stage a ”Long Distance Relationship” for their toys. Is this true love? Oh God, please tell me this is not true!
